Hi - Simple question, where within SI5 do we create and personalize quote templates with thigs like layout, graphis, company details and so on?

You do this in the Report Designer. You must be logged in with a Professional license of SI 5. Open the Reporting Center and then select Tools->Report Designer. Check out the Reports and Reporting Center section of this Forum.
