I may be missing something obvious here, but why are the only location columns available in the data matrix Location and Location5? Why is Location5 there but not Location4, 3, etc.?

Generally this is because Location5 is undefined. You'll find Location1 under the name you gave it (typically Building or Campus). Location2 would be Floor, Location3 is Room, Location 4 is Area (or whatever you named it).
